Sliced Fresh Fish Soup (Tomato, Onion, Miso, Tofu)
This version is light yet deeply comforting—slightly tangy from tomatoes, umami-rich from miso, and naturally sweet from onions.
How to Cook
Ingredients:
150–200g fresh fish slices
1 tomato (cut into wedges)
½ onion (sliced)
1 block soft tofu (cubed)
1–2 tbsp miso paste
700–800 ml water or fish broth
Ginger slices (optional but recommended)
Salt / light soy sauce (to taste)
Steps:
1. Prepare the base
Bring water or broth to a boil
Add onions and ginger, simmer for 5 minutes to release sweetness
2. Add tomatoes
Put in tomato wedges and cook until slightly softened
3. Cook the fish
Add fish slices gently
Let cook for 2–3 minutes (don’t overcook or it becomes tough)
4. Add tofu
Gently add tofu cubes and simmer for another 2 minutes
5. Add miso (important step)
Turn to low heat
Dissolve miso paste in a small bowl of soup, then add back in
Avoid boiling after adding miso to preserve its nutrients
6. Final seasoning
Taste and adjust with a little salt or soy sauce if needed
